Vegetable Smoothie Recipes: TOP 4 with Beetroot, Sweet Potato, Tomato or Cucumber
It all started green: leafy greens, fruits and water come together in the blender, 60 seconds later the green smoothie is ready - our favorite breakfast. But once you have a high-speed blender at home, you quickly move on. The possibility with the blender just make you crave for more: fresh almond milk, raw food soups, homemade hummus, wild herb pesto, nicecream and now: 4 vegetable smoothie recipes - sometimes hearty, sometimes in a fruity combination - an ideal complement to the green smoothie which must be tried by every smoothie lover.
The colorful vegetable smoothie makes your mouth water: Beetroot-purple.... sweet potato-orange... we have increased our consumption of raw food in a playful way. That's because a powerful blender can even turn raw sweet potatoes into a creamy vegetable smoothie. There are different occasions for the colorful vegetable kick, but we especially appreciate the colorful kick in the afternoon, against the typical midday sleepiness or as a meal during an alkaline relief day - e. G. before fasting. For good digestibility, we only used alkaline and fresh ingredients; all recipes are vegan.

Vegetable smoothie recipe: Deep Purple - with beetroot and raspberries
Admittedly: Beet is not everyone's cup of tea - especially not raw. But those who dare to try this smoothie will be rewarded with Deep Purple. This fantastic color is not only tempting to drink, it also attracts attention. We' ve already been asked several times, about the great color of our smoothies, while sitting on the bus or in the subway. This must mean something! However, we like deep purple not only because of the brilliant color, but also for its amazing taste. Beet harmonizes wonderfully with raspberries, orange, fresh mint and a little ginger. If you like it a little sweeter or use very acidic raspberries, add a date. Beetroot can be enjoyed raw and with peel. Somehow everyone knows that this earthy tuber is healthy - among other things, beet contains a lot of iron and is even said to lower blood pressure.

Vegetable Smoothie Recipe: Easy Peasy - with sweet potato, mango and lime
Did you know that sweet potatoes can be eaten raw? Obviously we love them boiled, grilled or fried - but even raw they are worth more than one bite. Sweet, crunchy-juicy, carrot-like in flavor, they make a healthy nutrient-rich raw food side dish (very high in antioxidants) or, as in today's case, the base of our easiest veggie smoothie: Easy Peasy. Easy Peasy is foolproof, it only consists of three ingredients. We combine sweet potatoes with frozen mango and lots of lime juice. Once again, we are amazed at how quickly the blender processes this tuber to a creamy fine consistency. This is not just "Easy Peasy", but also a kid-friendly veggie smoothie - especially for those little ones who aren't so keen on veggies.
Vegetable Smoothie: Easy Peasy
Ingredients
- 150 g sweet potatoes peeled
- 150 g frozen mango pieces
- 1 lime
- 300 ml water
- 2-3 ice cubes
Instruction
-
Peel sweet potato and cut into pieces. Put sweet potato pieces into container.
-
Squeeze lime and add juice and a small piece of lime with zest to the container.
-
Add frozen mango pieces to container. Add water and ice cubes.
-
Blend until a creamy consistency is achieved. If necessary, push the mixture to the blades with the tamper and add a little more water, depending on the desired consistency.
-
Done! Enjoy from the heart.
Vegetable smoothie recipe: Mr. Rossi - with tomatoes and peppers
Finding truly ripe, aromatic tomatoes on domestic ground is like finding a little slice of heaven. That's what happened to us when we found red and yellow tomatoes from the Spreewald at a Berlin organic market. They tasted like the best Sicilian tomatoes - only from Brandenburg. Unforgettably sweet, fruity and soooo tomatoey. Logically, this resulted in our Gazpacho 2.0 - of course without bread and slightly modified. A hearty smoothie which we like to have as a light lunch on hot summer days. Even though our gazpacho is a culinary bow to Spain and Portugal, we named this vegetable smoothie after the protagonist of the Italian cult cartoon series of the 60s and 70s: Mr. Rossi - He was constantly looking for a little piece of happiness. Viva la Felicita!
Vegetable smoothie: Mr. Rossi
Ingredients
- 125 g ripe tomatoes
- 1 small red bell pepper
- 1 spring onion
- 1 stalk of celery
- 1/4 avocado
- 2-3 tablespoons of Mediterranean herbs, e.g. basil, thyme, oregano, rosemary needles
- 1/2 clove of garlic
- 3 dried tomatoes
- 1 tablespoon olive oil
- a little lemon juice
- 1 pinch of salt
- 1 pinch of pepper
- 3-4 ice cubes
Instruction
-
Wash the tomatoes, peppers and herbs.
-
Cut tomatoes into quarters; remove the stalk from the peppers and then seed them, cut into pieces and add to the container.
-
Peel garlic clove, add to container.
-
Cut avocado in half and remove pit; spoon flesh of 1/4 avocado directly into container.
-
Add all remaining ingredients with a little water to container and blend on maximum for about 1 minute.
-
If you want to enjoy HERRN ROSSI slightly warmed, simply omit the ice cubes and blend a little longer until the desired temperature is reached.
-
Be careful with dried tomatoes: Often they are dried with salt - so you may not need to add that much salt!
Vegetable smoothie recipe: Green Guru - with zucchini, cucumber, celery and apple
Of course, we can not do without green. But this time completely without leafy greens. Instead, our green vegetable smoothie consists of lots of green vegetables: zucchini provides creaminess, cucumber for freshness and celery for proper vegetable flavor. An apple and a small piece of lemon (with peel) round off this vegetable smoothie. Green Guru comes with lots of alkalizing ingredients and a refreshing note, therefore this smoothie is a brilliant refreshment after sports!

Please help me. For years, I have been caring for my severely ill husband who has Parkinson's disease. Now he lives in a nursing home, and I have decided to finally do something for my own health by using the Vitaminx Pro 750 that I bought from you years ago to get my body moving. Could you please let me know which programs are available on the device - I can't find an explanation anywhere. In mid-August, I will turn 78. People always tell me I look much younger. I would like to feel that way too, which is why I am finally starting with my Vitamix now! Thank you in advance for your help!!! Kind regards, Maritta Horstmann
the programs are in the counter-clockwise direction starting from 12 o'clock:
1. Smoothies
2. Ice Cream
3. Soup
4. Puree
5. Cleaning

thank you for your feedback. The fact that we do not provide cost calculations for our recipes has nothing to do with them being designed for the "financially better off". It is simply not feasible for us, in terms of personnel and time, to calculate and constantly update the costs of the recipes, as well as specifying whether they use conventional or organic ingredients. We are a small to medium-sized company that relies on selling blenders, juicers, dehydrators, and accessories, not on providing recipes that we share for free. Additionally, I believe that you can roughly calculate the cost of a vegetable smoothie by using the prices at your local grocery store - regardless of whether you have a blender at home or are making the smoothie. If I use the prices at my organic market, the ingredients for the Deep Purple vegetable smoothie with beetroot and raspberries would cost around 3 euros - roughly estimated.
Best regards,
Carla
I am curious about the recipes for the different vegetable drinks. I am single and would like to know how much such a drink costs on average. In other words, how much do you have to spend to have the ingredients for one glass? Without having to drink 2 liters a day? After all, the vegetables and fruits don't get any better from day to day.
Best regards,
Christian
thank you for your comment. We're glad you like our vegetable smoothie recipes. Unfortunately, I can't tell you how much a smoothie or its ingredients cost. You would have to calculate that yourself by getting the ingredients at your local grocery store and calculating the prices for the respective quantities. I'm sorry, but I can't do that work for you ;)
Best regards,
Carla

just made the beet smoothie "Deep Purple" in my Vitamix.
It's actually mega delicious! I would never have thought!!!
I actually do not like beet so much, but is soooo healthy..... Well, I had a big bag of organic beetroot in the freezer for 3 weeks, but didn't dare to use it.
I had unfortunately no organic raspberries, only strawberries and also no orange. But the recipe I wanted to try (unfortunately heavily modified) immediately.
So the frozen beets and strawberries with two dates, some ginger and mint from the garden thrown into the Vitamix, spring water to it and briefly turned on...Carefully tasted..... And what can I say? Delicious!
Next time I'll try your original recipe with orange and raspberries! It is probably even better!?!
we are very happy to have inspired you to make a beetroot smoothie. The color alone is addictive, isn't it?
That you can drink something so tempting....I am curious how you like our recipe.
Love,
Carla

the Green Guru is really great.
We currently have an abundance of zucchini in our own garden. We mostly make ratatouille or a pasta sauce out of them.
They fit perfectly in the smoothie. Due to allergies, we had to leave out the apple. Instead, we added a bit of basil.
Do you have a tip on what to use instead of apple (for sweetness)?
Thanks and best regards,
Frank
Thank you very much for the lovely feedback on the Green-Guru recipe. You could replace the apple with a handful of grapes or with a pear.
Warm regards,
Carla
that makes us really happy. I also really like this beetroot smoothie - but I can highly recommend the Easy Peasy Smoothie with sweet potato, mango, and lime to you as well.
Warm regards,
Carla
Raspberry seeds are always a little noticeable, even when processed with a high-speed blender.
Warm regards and enjoy Easy-Pease :)
Carla
I've finally tried the Smoothie Deep Purple and I'm quite surprised at how refreshing it tastes. Since I naturally have beets growing in my garden, along with raspberries and mint, and I only need to buy a few more ingredients, it was clear to me that I had to try out this recipe. Bullseye!!!
How wonderful! We're so glad you enjoyed the beetroot smoothie so much. Personally, I also find the color so beautiful and want to drink it for that reason alone :)
Warm regards,
Carla
Here are some tips from the practical experience of a diabetic:
Sweetening with dates has the advantage that fibers and other good components slightly inhibit sugar absorption, as it is not pure industrial sugar.
AND: Sweet potato is a classic diabetic vegetable! From experience, I can confirm that the sweet potato contains an agent that lowers blood sugar levels.
Google and try it out!
Thank you very much for the valuable information!
All the best to you,
Carla
Thank you for your comment.
We actually do not have explicit low-carb smoothie recipes. I would simply recommend drinking green smoothies with a high proportion of leafy greens - at least 60-70 percent (referring to the volume of ingredients). Simply combine this with fruits of your choice.
Best regards,
Carla
A few days ago, I purchased the Vitamix from you. I've been reading a lot about green smoothies and have listened to various contributions. However, I’m still not quite clear on why starchy vegetables like broccoli or even carrots shouldn’t be included in green smoothies, especially since the sugar from the fruit and the longer-lasting starch in the stomach can lead to digestion issues. This combination doesn’t seem to matter in vegetable smoothies when I look at the recipes.
I think broccoli is such a healthy vegetable that I would want to add it everywhere. It’s dark green and grows above ground, not underground. And just because of the starch?
I eat a lot of raw food and also fruit combined with fresh grain porridge, and I’ve never had any issues.
However, with the preparation of green smoothies, I feel quite uncertain after all my research. Maybe you can help me out a little.
Best regards,
Bettina
Thank you so much for your comment. If you feel like adding broccoli or carrots to your smoothie, just give it a try! We can only provide general recommendations, as everyone has their own preferences. We are always experimenting with new combinations, and that's how we've come up with our vegetable smoothies, which we don’t drink daily but enjoy as a nice change of pace.
Trying is always better than just studying! :)
Best wishes,
Carla
I made a yellow smoothie today that I find really delicious. It's made with yellow beet, which I personally prefer over the red variety (it's milder). I'm sharing the recipe with you:
1/2 large yellow beet with skin
1 orange
about 1/3 pineapple
1 slice of lemon
a small piece of ginger
about 200 ml water
That should be about right. In fact, I used 150 ml each of orange and pineapple juice + 100 ml of water since I didn’t have any fresh fruits at home. This made the smoothie quite liquid and it also created a nice foam. Almost like a cocktail :). And it looks the part too: bright yellow and wonderfully sweet...
Have fun trying it out if you feel like it.
Best wishes, Dorothea
Wow! What a tempting combination. Thank you so much for sharing the recipes!!!
All the best to you,
Carla
I admit I read the posts and diligently collect all the recipes. The heat was the trigger. And the beetroot.
So I looked left, I looked right, no one around... All fears and concerns pushed aside... and that's how my FIRST Deep Purple came to be. The only change was using coconut milk instead of water.
Now that the ice has been broken, I know that from today on, I'll be having it DAILY for breakfast or lunch soup or dinner... as smoothies. THANK YOU!
Best regards, Marlene, Darmstadt
How wonderful, we are very happy to hear that. We wish you continued enjoyment and pleasure with smoothies and of course our recipes.
