This recipe is dedicated to all porridge fans - and I can gladly count myself among them. Chia seeds thicken this porridge and give it a good portion of the important omega-3 fatty acids. This combination with the freshly prepared warm strawberry sauce tastes just DREAMFUL and gives the green smoothie some decent breakfast competition.

Ingredients

  • 2 cups rolled oats
  • 1 tbsp. poppy seeds
  • 2 tbsp. chia seeds
  • 400 ml almond milk
  • 1 pinch of cinnamon
  • 1 pinch of vanilla bean ground
  • 200 g frozen strawberries
  • 1 tsp. honey
  • 1 squeeze of lemon juice
  • 1 pinch of cardamom
 

Instruction

  1. Mix oatmeal with poppy seeds, vanilla and cinnamon then pour 250 ml of almond milk into the mixture.
  2. Soak overnight in the refrigerator
  3. Separately, mix the chia seeds with 150 ml of almond milk so that no lumps form. Shake several times during the first ten minutes.
  4. Also soak overnight in the refrigerator.
  5. In the morning, mix the oatmeal with the chia pudding.
  6. Boil the strawberries in a small saucepan with lemon, honey and cardamom, puree and pour over the porridge while they are warm.

Chia seed recipe with almond milk and mango

I think this was the first chia pudding I tried. After that it was immediately clear, sophisticated desserts can be so simple. Chia pudding also reminds me a bit of a healthy version of panna cotta. This recipe is combined with a tropical mango puree and doesn't need any additional sweeteners, because a really ripe mango brings enough sweetness with it. In addition, there is the flavor of almond milk, which can be prepared very easily and quickly from almond paste and water.

  • 250 ml almond milk
  • 3-4 tbsp. chia seeds
  • 1 mango
  • 1 orange only the juice
  • 1 handful of blueberries for decoration
 

Instruction

  1. Stir the chia seeds into the almond milk and allow to swell for 10-15 minutes. Stir several times to prevent lumps.
  2. Peel the mango and remove the core. Then blend together with the orange juice - 1/2 minute in a high-speed blender.
  3. Pour the chia pudding into two glasses, add the mango puree and sprinkle with fresh blueberries if desired.

Strawberries, vanilla and lemon balm in combination with chia-almond-milk-pudding - everything just fits! It fits best using Tahitian vanilla, the queen of all vanilla beans.   1. Blend the almond milk, the dates and the vanilla pulp in a high-speed blender to a uniform consistency. This takes about 30 seconds in a good high-speed blender.
  2. Then stir in the chia seeds and allow to swell for 10-15 minutes. Stir occasionally to avoid lumps.
  3. Cut the strawberries into quarters and sprinkle over the chia-vanilla pudding with a few leaves of lemon balm.

Chia seed pudding invites layering because it simply brings the perfect consistency to do so. I think it looks best when you layer two contrasting colors. Blueberries, for example, are great for this. In addition, poppy seeds are added, they not only fits visually, they are extremely good suppliers of iron and calcium.

Ingredients

  • pulp of a young coconut alternatively: 3 tbsp. coconut puree
  • 4 tbsp. chia seeds
  • zest of a 1/2 lime
  • 1 squeeze lime juice
  • 300 ml water
  • 8 medjool dates destemmed
  • juice of 1.5 oranges
  • 1 pinch of cardamom
  • 1 pinch of cinnamon
  • 0,5 vanilla pod only the pulp
  • 3 tbsp. of sesame (light and dark)
 

Instruction

  1. Puree the flesh of the coconut with water, lime juice and the grated zest in the blender until an even consistency is reached.
  2. Then stir in the chia seeds and let swell for 10-15 minutes. Stir occasionally to avoid lumps.
  3. Now puree dates, orange juice and spices into a fine date cream.
  4. Finishing off - toast the sesame seeds in a non-stick pan without fat until they are nice and crispy.
  5. Serve in a glass, alternating pudding and cream, sprinkle with sesame seeds to top it off.

Chia seed recipe for nutty chocolate drink

Of course, this also works with chia seeds - a shake with raw cacao and hazelnuts. I especially like the intense roasted aromas of the hazelnuts here. The Medjool dates and the frozen bananas provide enough sweetness, at the same time they cool down the shake. Definitely a nutritious afternoon snack - especially for chocolate lovers and children.

Legends say that the Incas had enough energy for a whole day with one tablespoon of chia seeds during their missions across the Andes. Many endurance athletes - especially marathon runners and triathletes - have been inspired by this and regularly eat chia seeds to naturally replenish their nutrient reservoirs after long training sessions. This gave me the idea of combining chia seeds with the most natural of all isotonic drinks: fresh coconut water. Thank you very much for the great recipes! I have already tried a few of them... I am a bit confused about the chia gel: you generally recommend a maximum of 2 tablespoons of chia per day, but the recipe calls for 3 tablespoons for 300ml. That seems like a lot to me for such a small amount of liquid. And how can I make the gel as clear as in the photo? Even with white chia seeds, my gel is rather cloudy... or should I just use less seeds?

It's great to hear that you liked the recipes and have already tried some yourself. To answer your question: Yes, for the chia seed gel, you can use 3 tbsp of chia seeds in 300ml of coconut water. However, please note that the gel does become quite thick. We used slightly less chia seeds for the photo :)

I initially underestimated the tiny chia seeds. Since I started adding these little seeds to my muesli every day, I have been significantly less tired. My energy levels last throughout the entire day and my joint pain has almost disappeared.

Although I'm not a vegetarian or vegan, I only eat meat occasionally.
For the past few weeks, I've been having soaked chia seeds in my smoothies, yogurts, or any other way.
How much and how can I consume them to lose a few kilos? (I can easily lose 15 kg).

Dear Brigitte, Chia seeds can help with weight loss. The seeds expand in the stomach, leading to a longer-lasting feeling of fullness. By swelling up, they naturally create less space for more food in the stomach. This signals to the brain that the stomach is full. However, I doubt whether it is possible to lose 15 kg just by consuming Chia seeds. Physical activity and overall conscious eating also play a significant role in weight loss. Regarding the dosage of Chia seeds: due to their high nutritional potency, I recommend consuming a maximum of 30 grams of Chia seeds per day. If you have very low blood pressure, it's advisable to take Chia seeds in smaller quantities as a precaution. Although not yet sufficiently scientifically proven, Chia seeds are said to have a blood pressure-lowering effect. Best regards, Katharina.

Thank you for this article. These so-called superfoods are ridiculed and spoken poorly of in many media outlets (Spiegel Online, SZ, Runner's World, Guardian). Why, is a mystery to me. Price, performance, and sustainable cultivation methods are a perfect match. I have been eating chia for 2 years now. And this year, I had an excellent experience:

I have been running marathons twice a year for the past 10 years. Nutrition plays a significant role in this performance. Often, people try carb-loading or consuming a lot of meat. Additionally, they bring along granola bars and energy gels for nourishment before and during the race. However, this year, I followed a plant-based diet the day before. On race day, I ate two tablespoons of chia soaked in yogurt and water three hours prior, followed by drinking two liters of water. I completed the marathon in under 3 hours and 30 minutes without relying on energy bars or gels. I needed to drink very little water and had almost no thirst. In previous years, I would often reach the finish line feeling hypoglycemic. This year, I felt fantastic. I only ate something two hours after crossing the finish line. That means between 6:00 am and 3:00 pm, I consumed two spoons of chia and nothing else, and I ran a marathon.

This, for me, proves the power of chia.

I myself really enjoy using chia seeds. However, I believe that one can only access the valuable nutrients if the seeds are "destroyed," for example, by blending them in a smoothie or finely chewing them. When I sprinkle the seeds whole in water or other liquids, they become gelatinous and act as wonderful fiber, promoting digestion. But in my opinion, the seeds are then passed undamaged. This is the case with many seeds that are spread by animals, among other things. Unfortunately, I have not yet found a competent study on this matter.

Dear Angelika, of course, whole/unground Chia seeds can also "pass through" along with their nutrients. However, similar to flaxseeds, Chia seeds release numerous essential nutrients and vital substances to us through their valuable mucilages. If you want to achieve almost one hundred percent nutrient availability, it is indeed recommended to mix the Chia seeds. Best regards, Katharina.

I have a question regarding the usage:
I have read that chia seeds should always be soaked before consumption. This is both for better digestion and to deactivate phytic acid.

Occasionally, I have added the seeds without soaking them, and now I am a bit uncertain.

Dear Rowena, you don't necessarily have to soak chia seeds; you can consume them dry as well, for instance, as a topping on a green smoothie. However, if you choose to eat the seeds without soaking them first, it is important to make sure you drink enough fluids because chia has the unique property of absorbing liquid. Regarding phytic acid, soaking can already reduce its content, although the extent to which it is reduced is not exactly known. Best regards, Katharina.
