Chia seed recipes - simple, delicious and healthy! The nutrient-rich chia seeds can be transformed into creamy puddings, fruity desserts or energy gels in no time. Because the small grains have an incredible swelling and binding capacity. At the same time, they are relatively tasteless - tasting only slightly nutty - this results in endless possibilities in preparation, therefore the various chia seed recipes. Due to their nutrient density, they are a superfood par excellence - e. G. lots of omega-3 fatty acids.

In this post, I present my favorite chia seed recipes. They are super quick to prepare, so even for me with my three kids, dessert is rarely missing at lunch or dinner. Tip: If you don't feel like having green smoothies in the morning, I can also recommend these chia seed recipes for breakfast.
All of the following recipes are vegan, as well as sugar and gluten free. When using almond milk, I prefer the fresh, homemade version. Here you can find our 5 most popular almond milk recipes.

Chia seed recipe with warm strawberry sauce
This recipe is dedicated to all porridge fans - and I can gladly count myself among them. Chia seeds thicken this porridge and give it a good portion of the important omega-3 fatty acids. This combination with the freshly prepared warm strawberry sauce tastes just DREAMFUL and gives the green smoothie some decent breakfast competition.
Chia seeds recipe with warm strawberry sauce
Ingredients
- 2 cups rolled oats
- 1 tbsp. poppy seeds
- 2 tbsp. chia seeds
- 400 ml almond milk
- 1 pinch of cinnamon
- 1 pinch of vanilla bean ground
- 200 g frozen strawberries
- 1 tsp. honey
- 1 squeeze of lemon juice
- 1 pinch of cardamom
Instruction

Mix oatmeal with poppy seeds, vanilla and cinnamon then pour 250 ml of almond milk into the mixture.

Soak overnight in the refrigerator

Separately, mix the chia seeds with 150 ml of almond milk so that no lumps form. Shake several times during the first ten minutes.

Also soak overnight in the refrigerator.

In the morning, mix the oatmeal with the chia pudding.

Boil the strawberries in a small saucepan with lemon, honey and cardamom, puree and pour over the porridge while they are warm.
Chia seed recipe with almond milk and mango
I think this was the first chia pudding I tried. After that it was immediately clear, sophisticated desserts can be so simple. Chia pudding also reminds me a bit of a healthy version of panna cotta. This recipe is combined with a tropical mango puree and doesn't need any additional sweeteners, because a really ripe mango brings enough sweetness with it. In addition, there is the flavor of almond milk, which can be prepared very easily and quickly from almond paste and water.
Chia seeds recipe with almond milk and mango
Ingredients
- 250 ml almond milk
- 3-4 tbsp. chia seeds
- 1 mango
- 1 orange only the juice
- 1 handful of blueberries for decoration
Instruction

Stir the chia seeds into the almond milk and allow to swell for 10-15 minutes. Stir several times to prevent lumps.

Peel the mango and remove the core. Then blend together with the orange juice - 1/2 minute in a high-speed blender.

Pour the chia pudding into two glasses, add the mango puree and sprinkle with fresh blueberries if desired.
Chia seed recipe for vanilla pudding with fresh strawberries
Strawberries, vanilla and lemon balm in combination with chia-almond-milk-pudding - everything just fits! It fits best using Tahitian vanilla, the queen of all vanilla beans. Tahitian vanilla is expensive, but also more flavorful. It is available in well-stocked delicatessen stores. I am curious to hear what you have to say about it.

Ingredients
- 250 ml almond milk
- 3-4 tbsp. chia seeds
- 2 medjool dates stemmed
- the pulp of 1/2 vanilla bean - I recommend Tahitian vanilla.
- 200 g fresh strawberries
- a few leaves of lemon balm
Instruction

Blend the almond milk, the dates and the vanilla pulp in a high-speed blender to a uniform consistency. This takes about 30 seconds in a good high-speed blender.

Then stir in the chia seeds and allow to swell for 10-15 minutes. Stir occasionally to avoid lumps.

Cut the strawberries into quarters and sprinkle over the chia-vanilla pudding with a few leaves of lemon balm.
Chia pudding recipe with blueberries
Chia seed pudding invites layering because it simply brings the perfect consistency to do so. I think it looks best when you layer two contrasting colors. Blueberries, for example, are great for this. In addition, poppy seeds are added, they not only fits visually, they are extremely good suppliers of iron and calcium.

Ingredients
- 300 ml almond milk
- 4 tbsp. chia seeds
- 2 medjool dates
- 2 tsp. poppy seeds
- 160 g blueberries
- a little maple syrup
Instruction

Puree the dates with the almond milk in a blender and then add poppy seeds and chia seeds. Stir several times and leave to swell for 15 minutes.

Then puree half of the chia pudding with half of the blueberries.

Now layer the two-colored chia puddings in a glass, sprinkle the remaining blueberries on top and drizzle with maple syrup.
Chia pudding recipe with oriental date cream and toasted sesame seeds
A true chia fusion recipe: the Inca gold meets Indian chai flavors - cardamom, cinnamon, vanilla - topped with toasted sesame seeds. The pudding is beautifully smooth, thanks to the pulp of a fresh green coconut. If you don't have a source for this, just use raw coconut puree. (the tastiest is from Big Tree Farms) After enjoying this dessert, I am somewhere in 1001 nights...
Chia seeds recipe with oriental date cream and toasted sesame seeds
Ingredients
- pulp of a young coconut alternatively: 3 tbsp. coconut puree
- 4 tbsp. chia seeds
- zest of a 1/2 lime
- 1 squeeze lime juice
- 300 ml water
- 8 medjool dates destemmed
- juice of 1.5 oranges
- 1 pinch of cardamom
- 1 pinch of cinnamon
- 0,5 vanilla pod only the pulp
- 3 tbsp. of sesame (light and dark)
Instruction

Puree the flesh of the coconut with water, lime juice and the grated zest in the blender until an even consistency is reached.

Then stir in the chia seeds and let swell for 10-15 minutes. Stir occasionally to avoid lumps.

Now puree dates, orange juice and spices into a fine date cream.

Finishing off - toast the sesame seeds in a non-stick pan without fat until they are nice and crispy.

Serve in a glass, alternating pudding and cream, sprinkle with sesame seeds to top it off.
Chia seed recipe for nutty chocolate drink
Of course, this also works with chia seeds - a shake with raw cacao and hazelnuts. I especially like the intense roasted aromas of the hazelnuts here. The Medjool dates and the frozen bananas provide enough sweetness, at the same time they cool down the shake. Definitely a nutritious afternoon snack - especially for chocolate lovers and children.
Chia seeds recipe for nutty chocolate drink
Ingredients
- 80 ml almond milk
- 2 tbsp. chia seeds
- 3 medjool dates stoned
- 60 g hazelnuts roasted and some for decoration
- 3 bananas ripe, frozen, medium, peeled and sliced
- 2 tsp. cocoa
- 1 tsp. vanilla ground
Instruction

Mix almond milk and chia seeds, stir several times and leave to swell for 15-30 minutes. Stir occasionally to avoid lumps.

Puree the hazelnuts and dates in a high-speed blender to a buttery consistency.

Then add the chia mixture, frozen bananas, cocoa and vanilla to the blender and blend until a homogeneous cream is formed.

If the consistency is too thick, add a little almond milk.

Arrange in glasses and sprinkle with hazelnuts, grated chocolate and hemp seeds.
Chia seed recipe for dessert with pomegranate seeds + mint
This chia dessert is definitely something for festive occasions - like Christmas or New Year's Eve. While the chia pudding with date pieces and vanilla tastes nice and smooth, the pomegranate with its seeds conjures up a glamorous topping - visually ant taste-wise. Pro tip: a few leaves of mint and maple syrup.
Chia seeds recipe for dessert with pomegranate seeds and mint
Ingredients
- 4 tbsp. chia seeds
- 300 ml plant milk e.g. rice milk or rice coconut milk
- 2 medjool dates stoned
- 1 pinch vanilla powder alternatively: some pulp of a vanilla bean
- 4 tbsp. of pomegranate seeds
- few small mint leaves
- a little maple syrup
Instruction

Blend the dates with the almond milk, then add the poppy and chia seeds. Stir several times and leave to swell for 15 minutes.

Allow to soak for 15-30 minutes. To prevent lumps, stir once in a while.

When the mixture has thickened enough, pour into dessert glasses and garnish with pomegranate seeds and mint.

Top with a little maple syrup.
Chia seed recipe wiht fresh coconut water and red currants
Legends say that the Incas had enough energy for a whole day with one tablespoon of chia seeds during their missions across the Andes. Many endurance athletes - especially marathon runners and triathletes - have been inspired by this and regularly eat chia seeds to naturally replenish their nutrient reservoirs after long training sessions. This gave me the idea of combining chia seeds with the most natural of all isotonic drinks: fresh coconut water. Chia seeds recipe from fresh coconut water with berries
Ingredients
- 300 ml coconut water fresh, young coconuts can be found in well-stocked Asian shops
- 3 tbsp. chia seeds
- 1 squeeze of lime juice
- 1 handful of currants alternatively: 1 handful of pomegranate seeds
Instruction

Mix the coconut water with the chia seeds and lime juice, add the berries and leave to soak for about 30 minutes. Shake several times to avoid lumps.

Enjoy well chilled.

The fact that you even make almond milk yourselves is just amazing. I’m sure it’s much healthier than what you get from the grocery store, but I can imagine it’s quite time-consuming.

It's great to hear that you liked the recipes and have already tried some yourself. To answer your question: Yes, for the chia seed gel, you can use 3 tbsp of chia seeds in 300ml of coconut water. However, please note that the gel does become quite thick. We used slightly less chia seeds for the photo :)

How can the super seeds help me with weight loss???
Although I'm not a vegetarian or vegan, I only eat meat occasionally.
For the past few weeks, I've been having soaked chia seeds in my smoothies, yogurts, or any other way.
How much and how can I consume them to lose a few kilos? (I can easily lose 15 kg).

I have been running marathons twice a year for the past 10 years. Nutrition plays a significant role in this performance. Often, people try carb-loading or consuming a lot of meat. Additionally, they bring along granola bars and energy gels for nourishment before and during the race. However, this year, I followed a plant-based diet the day before. On race day, I ate two tablespoons of chia soaked in yogurt and water three hours prior, followed by drinking two liters of water. I completed the marathon in under 3 hours and 30 minutes without relying on energy bars or gels. I needed to drink very little water and had almost no thirst. In previous years, I would often reach the finish line feeling hypoglycemic. This year, I felt fantastic. I only ate something two hours after crossing the finish line. That means between 6:00 am and 3:00 pm, I consumed two spoons of chia and nothing else, and I ran a marathon.
This, for me, proves the power of chia.
I have read that chia seeds should always be soaked before consumption. This is both for better digestion and to deactivate phytic acid.
Occasionally, I have added the seeds without soaking them, and now I am a bit uncertain.
I thank you for the wonderfully delicious smoothie recipes, all very practical, and for the extra bonus of the chia seed desserts.
